Raw Food Challenge Day One – Guacamole for dinner???

Today’s Raw Menu

Yes, we have no bananas!

Breakfast:      Four Bananas
Lunch:           Pear Celery Lime Smoothie
Dinner:          Cucumber Salad with Creamy Avocado Dressing and Creamy Zucchini Avocado Soup

I gotta say after four bananas, you’re not going to be hungry.  The juice was awesome (see recipe below) and dinner?  Well dinner was a whole lot of guacamole, in my opinion.

Stephane has always maintained that eating raw is eating dip.  I can’t really argue when it came to the “soup.”  I mean, avocado, tomato, limes juice, cumin, salt and pepper in the food processor.  That’s guacamole, right?  Oh sure, you’re allowed to heat it up a little.  And I totally doused it with spicy Cholula sauce, and it tasted great but it was dip, not soup.

The salad was chopped cucumbers, tomatoes and green onions with a “creamy avocado dip” – guess was that consisted of.  Oh yeah, see above.  It too was delicious and Stephane said he could eat it daily.  Whatevs.

The juice was the revelation here.  It’s totally a keeper.  I ended up adding pineapple to get a bit more juice out of it because I thought we might be hungry but really, this menu was plenty filling.  We’ll see tomorrow what my thighs thought of all the avocado.

Your Daily Juice

In the Juicer:
Two Pears
Two Stalks Celery
One Lime, peeled

It was SO refreshing.  So light and yummy. I doubled what you see here and added a quarter pineapple after first tasting it. Either way it’s awesome.  Next time I’ll add more veggies.
